So, I have always loved chickpeas, but never really knew what to mixx them with. I would throw them in a random salad, but did not feel it was giving them justice. I began listing ingredients that I love, and from there came up with this magical plate of veggies.
1 clove garlic, minced
1/2 small red onion, diced
1/2 lemon, juiced
2 tablespoons red wine vinegar
1/4 cup olive oil
Salt and freshly ground black pepper
1 can of chickpeas drained and rinsed
cherry tomatoes, halved (as many as you want)
1/2 bunch mint, chopped
1/2 bunch cilantro, chopped
1 head butter lettuce, shredded (or whatever your favorite lettuce is)
Combine all ingredients in the bowl, minus the chickpeas, mint and cilantro. Once you stir it all in put the remaining ingredients in, along with salt and pepper to taste.
